I usually like having two main characters and everyone else is secondary, but I will make two or more minor characters as important as the two main for certain part of the story and then switch them, sometimes introducing new characters. That way it would make 5-6 important characters all the time, but the story from the beginning till very end fully will be 100% around only those two. If that makes any sense :D

Its a little hard to say actually. Most plot/subplot ideas I have or have had focus on 2 or 3 characters at a time even if there's more than 2 or 3 important, main characters to the whole story.
