Besides the ones already mentioned, here are a few off the top of my head:

Epic Movie - Parodies 'Narnia' and others
Date Movie - Parodies 'My Big Fat Greek Wedding'
Not Another Teen Movie - Parodies 'She's All That' among others

However, you should bear in mind that most parody movies are critically unsuccessful.

P.S. - The 'Scary Movie' series parodies way too many films and it's funnier if you have watched them all.

I don't usually like parodies, but Robin Hood - Men in Tights is kinda funny...
Also Spaceballs (is a parody of the original star wars trilogy); Shaun of the Dead is sort of a parody about zombie movies...
Galaxy Quest is another I thought it was kinda good... It's sort of a star trek parody but it's more a comedy than anything;

Love those type of movies! well the only ones I can think of are the "Scary Movie" series. I think "Your Highness" would be considered one because they are basically making fun of medival quests, you know, with princes, dragons. wizards, etc. It wasn't liked by too many people, but it's a good laugh! hoped I helped!
