Does anyone else have problems adding more options to a pick? I can only add one more option, and when I try to add another, I just get sent up to my question! I need more then 3 options :p

It's a bug. Report it, using the "Contact us" link at the bottom of any page.

I get a similar problem sometimes when editing articles to add images: I can only add one image at a time. The workaround for me has been to edit the article once for each image I want to add. You may want to try that with your picks, as a workaround: select edit, then add another pick, then submit the changes, then repeat until you have all the ones you wanted to add in the first place.
