Well, the Cullens are attempting to blend in with the humans. Since they are supposed to be eating lunch like their high school counterparts, they have to pretend to eat something. As for the eggs, it's quite obvious...as many pointed out, Emmett is the ultra-strong, body builder, jock type. A staple for anyone trying to build muscle mass is protein...EGGS!!!
Well, I'm not sure though. What I think is that probably the eggs may aisle the human blood smell or something like that, but I'm not sure, it's a possibility.
PS: I published this photo for guiding people to see the eggs. I would've publish one of Emmett walking in the cafeteria, but the one that I have, is cuted just in his hand, so that's why :)
