I wasn't thinking of producers or writers as celebrities, so the first one I thought of was Edward Norton - he's thoughtful and intelligent, so it would definitely be an interesting conversation. I consistently get the impression (in interviews, DVD commentary and the like) that he's the smartest person in the room, most of the time.
