I am about to start watching Naruto Shippuuden and I was wodering if I was going to see more of Hinata than the first season?

yeah compared to part 1 naruto and its fillers you could see her more, but she wouldn't appear throughout the series too much... read on naruto wiki for the informatino on which arcs which she appears...
