I think it meant to establish that Tiana can accomplish all this and shes a woman, most women were not allowed to own a resteraunt and such and didnt even make it that far. So its reffering to that.

Because back then women didn't really own their own business or call all the shots. I think the line is supposed to show that she's independent and doesn't want the help of a man.
