Yes, why else would she have eaten it? You can also tell that she believed by the expression on her face when the Old Hag told her it was magical.

You can totally tell by the way she said her whole wish and how happy she looked right before taking a bite on the apple. Also I'm pretty sure that she still thought it worked because if you think about it in Snow White's point of view She wished on the apple everything went black and BOOM she wakes up to her prince, and away to his castle they went! <3

That is true KataraLover. SW is so sweet and probably didn't want to be rude, thats very unlike her.
But iHyrule made a very good point. Snow seemed like she really believed in that apple!

Wishing into the well worked, so why shouldn't she believe into a magic apple? In her world, there apparently are things like that.
