why was Azula fire blue? in the las airbender

It's a display of power and her personality. Blue fire burns hotter than red. If I remember correctly the creators said she's able to bend blue fire because of her cold manipulative mind frame.
It has also been said that it burns hotter and is there for blue because of her mastery of lightningbending.
