In the first episode of Ashes to Ashes, Gene mistakenly thought that Alex was a prostitute and when she acted out and strangely in the police office he accused her of being stuck up and one of the ´high class hookers´ all very sarcastic of course. Anyhow he offered her Bollinger Champagne, scathingly in the police station, which is abbreviated to Bolly or Bolls and also Gene will later refer to Alex as Bollinger knickers. This nickname resurfaces in the episode with Chas Kale, when they go to his restaurant and he offers Alex, Gene, Ray and Chris Bolly (the champagne again) and Alex scathingly asks ´Does it come with knickers?´

You said it much better than I could have done. Remember Gene sometimes calls Alex Bolly Kecks as well. Excellent Explaination
because alex is posh, she wouldnt want to drink TAB (fizzy pop in the 80s)as offered by shaz (ep1)
gene said she would prefer bollinger.... hence bollinger knickers, bolly, bolls.
bolly is a posh type of wine, so he calls her that because they think of her with a plum n her mouth, and the knickers came from the first ep where she was dressed as a prostitute.. hence the name bollyknickers
