The parrot tulip on the New Moon book cover doesn't really have an explanation. Little Brown, the publishing company of the book, chose it. But, i think it has to do with her life with Edward coming to an end. the flower is wilting. Although, we know that they reunite in the book.
If you look closely, the red ribbon on the Eclipse book cover is frayed, tattered. That symbolizes everything that had happened when Edward had left. He left, Jacob helped Bella, and Bella ends up ~torn in Eclipse. (However, Bella isn't really torn. She saw what her life would be without Edward and just couldn't live with that)
Breaking Dawn's cover of the white queen and red pawn, that symbolizes Bella and her immortality. When Bella was human, she was the weaklink. The weakest of everyone that she knew. But, when she was changed into a vampire, she became the strongest. She went from being a weak pawn, to the strongest piece on a chess board... the queen.
