Either Rosalie's point of view- it would reveal a lot about her life and personality or Alice's- it would be funny and reveal more about her character. Carlisle's point of view wouldn't be bad either and you'd learn more about him and his earlier vampire life and his debate wioth himself whether or not to change Edward.
