Besides, the camera crew is supposed to be just observers. They occasionally interact with the workers, but on the whole they aren't supposed to. They haven't told Dwight and Angela they know about them, why would they tell Pam and Jim?

Good point. But I think the idea was that the camera crew simply would not believe it at all after everything they saw them go through.
And I think Dwight and Angela are much more entertaining trying to keep things a secret... and Angela would probably call them gigantic perves for capturing them making out lmao!
