Actually love is somewhat scientific, attraction triggers chemical reactions in the brain and pheremones act as chemicals that cause attraction in the first place. That's the chemistry part, there is a little biology there as well as well as some physics thrown in there for good measure haha :)
But as smart as Sheldon is I don't think he would understand it and the more one would explain the more he would counter-attack with his own rebuttal. I still believe that Sheldon subscribes to the idea of symbiosis. 2 people coexisting for the mutual benefit of each other like he has with Amy. She "dates" him to keep her mom off her back and he in return gains a companion.
