Padme Naberrie Amidala!! She was in the Refuge Relief Program, then the Princess of Theed, then a Queen (at 14), then a Senator. She married Anakin and had Luke and Leia. She's the whole reason the whole classic trilogy even happened! How can you not love her! She is an amzing person and I admire her deeply. So of course, she's my favorite.
