I think that Eric and Sookie are PERFECT together! Since Sookie always has danger at the doorstep, Eric will always be there to protect (and occasionally have passionate primal sex) with her. Bill on the other had has lied to her form the beginning! who does that? and then he says that he has fallen in love with her.
You can see throughout the 5 seasons that Eric has always kept an extra eye on Sookie.

Eric and Sookie had huge moments in the finale. Eric showed he gets her, he's always gotten her. He told Nora "she's a waitress", just like Sookie has always said herself. Eric has NEVER treated Sookie like a freak or science experiment. And then during their hug at the end Sookie looked up at him with obvious love, even if she hasn't accepted it quite yet. I was just thinking, you only have to watch episode 6 and the finale of Season 4 to see who has the purer, truer love for Sookie. When Eric has amnesia in episode 6, he tells Bill when he's about to murder him (stake him in his yard grrr) that he hopes Sookie and Bill find their way back to each other, because he just wants her to be happy. He says this with no other motivation or agenda because he has amnesia, and Sookie isn't around to hear this. Posted over a year ago

sookie pissed me of this season!! I will never get over that "I Love you". I did NOT expect him to say it. Maybe later in time, yes, but it was a TOTAL surprise! I had to press pause because I was squealing/half-crying so hard... my life is complete.
I don't think Sookie really gets how BIG of a deal this is... the 1000+ yr old viking vampire god, who doesn't want to feel human emotions, who never loved anyone except Pam and his family, admits TO HER that he loves her.
Seriously, that's such a huge deal for him!
