If, hypothetically, mermaids are real, why have humans not discovered proof of them yet?

Because we've only explored 5% of the ocean, which isn't much compared to the ENTIRE ocean. We've explored space more than we have the sea. I mean, we keep discovering new species of whales and those are HUGE ass animals that live in the ocean. It's not surprising that if mermaids exist that we haven't discovered them yet.

Well, we really haven't delved that far into the ocean and are discovering new species of fish and whales all the time. Perhaps when mermaids see our vessels approaching, they go into hiding out of fear.

Because they are very far below in the ocean and very frightened of humans. I believe they do come above sea and go back down quickly. Too much happening that frightens them so they stay far below sea.
