Well, if you want to know what the abilities are that Sauron could have, you just need to look at the dark powers that were given to him by the Dark Lord Morgoth when he corrupted Sauron to use him as a spy. During the First Age, Sauron went from a meer spy, to Morgoth's chief lieutenant, and during that time he was well known for his sorcery, illusions, and shapeshifting. He used this to become the master of the werewolves.During the Third Age, after the ring was cut off Sauron's finger and lost, Sauron's skill in necromancy was revealed. Many things not mentioned in the books or movies of the trilogy but in other books, was that he had knowledge of how to use the substances (elements) of middle earth, naturally favouring fire. Also, he has a strong ability to alter the perceptions of his enemies. Finally, the purpose of him presenting himself as an eye, is so that no one forgets that he has the ability to see through all disguises. There is most likely many other abilities that J.R.R. Tolkien thought up for Sauron, but didn't make them completely obvious for people to catch, leaving it the job of LOTR fans, to find them.
