Itachi Uchiha has not yet died in any episode of Naruto cause it has not yet been animated from the manga. The anime has not caught up to that particular part of the manga. But yes, Itachi Uchiha dies in chapter 393 of the manga if you wish to read that chapter.
If Itachi is dead why do he appears later in the manga

I think it is probably just a Gennjutsu he planted in Sasuke while giving Sasuke some of his occular powers (when he tapped Sasuke's forehead). But who knows, I may be wrong. I cannot wait to read the next manga chapter and find out!!!! I only think it may be gennjutsu cause of the birds- the birds always appear when Itachi does a gennjutsu.
