It's because it makes it even more different to the classical vampire image; it literally means vampires don't have a physical weakness. After all, if they're seen sparkling, they can just kill the humans who saw and move to a different place or country. Although it's good to be original, a lot of people (including myself) feel that twilight vampires aren't vampires. They don't burn in the sun, they don't not like holy water or Bibles, they don't seem to be allergic to silver (at least it isn't mentioned in the series, I think; I admit I didn't exactly reread Twilight), and they can't be killed with a stake through the heart. Their only weakness is sparkling, which isn't vampire-like, making them hardly vampires at all, and isn't really a weakness at all.
As well as making vampires annoying Gary-Stuish, it's seen as very shallow: as in, oh, of course even vamps supposed weakness makes them handsome and beautiful. Please don't attack me for saying this, you asked why people hate sparkling, and I answered. It's not a weakness, shallow, and kind of lame.
Oh, and it's seen as gay for boys to sparkle. I don't like that argument, but lots of people think that.
