Can anyone tell me what exactly happens to Goku at the end of Dragonball Gt? I know that he leaves with Shenron but does he become like immortal or something?
There's no real answer, because they purposely left it open. but it is implied that Goku became a lot stronger when he absorbed the dragonballs. whether or not he is immortal is unknown. all we know for sure is that he was training with shenron for 100 years and probably learnt a few new things.
