There are a lot of popular crossover couples who people LOVE, but nobody ever writes about, for example I'm a big fan of Snow and Adam together, but it's difficult to find fanfiction about them, so I suggest doing a couple that not a lot of people write about. Some popular ones I can think of (but aren't in many stories) are Eugene/Belle, Aladdin/Mulan, Jasmine/Belle, Eric/Aurora, Shang/Tiana and Jane/Milo.
Disney fans are suckers for high school romance stories, but love triangles and forbidden relationships become popular as well.
