was Buffy supposed to end at season 7.....???

what happened because season 7 ep 22 chosen didnt seem like the ending of a tv serie

Yes. It was supposed to be the end of Buffy the Vampire Slayer for then. Sarah Michelle Geller said she didn't want to do Buffy anymore so they had a whole year to prepare for the end. Of course they kept the storyline open so that they could continue if they had the chance. The chance came when they started Buffy Season 8 in comic book form. Joss Whedon works on the Season 8 comics and has said that the story continued there is canon.

They started fighing and Willow did a spell (away from the fighting) to make every potential a Slayer. they were fighting and winning but Buffy got wounded, taunted by the First before telling it to "get out of my face". The amulet that Spike had started working, generating uber-vamp killing rays and collapsing the hellmouth, everyone got out except Spike and Buffy, Buffy told Spike she loved him but he said "No you don't, but thatks for saying it" at which Buffy escaped. The entire S7 seems like it's closing up, are you sure there was meant to be a season 8 TV series? I've never heard that before.

It seemed like an ending to me. The entire season 7 felt like a final season. Bringing back the First, arguably the biggest evil they'd ever faced. Destroying Sunnydale, which means the series had started by Buffy moving there and ends with her and the rest leaving. Spike's story arc had gone as far as it could. Activating the Potentials, breaking the "one girl at a time" rule..... All of those seem like indicators of an ending to me. The love triangle wasn't answered because the show wasn't meant to be about that, and both pairings had become so popular that favouring one would upset about half the fans.
